Weston got an owie...

Hi, my name is Weston and I got my first big owie this week. I've had lots of scraped knees and bruises before, but this is the first time that my mom panicked, started crying, called dad, and then rushed us to my Dr.'s office! Boy, was it exciting! What happened was, I climbed up onto the bathroom counter while my mom was getting ready for the day. I like to climb up there, turn the sink on and just splash away, making a huge mess...it's fun! Well, this time I slipped and hit the bottom of my chin really hard on the edge of the counter top. Boy, did I scream! My mom rushed over, picked me up, looked all over my face and in my mouth, but she couldn't find my owie. Then, she tilted my head back and saw underneath my chin...her eyes got HUGE and she whispered something and then started rushing around like crazy! She yelled for Caleb to get his shoes on and she tried to finish getting dressed while she was holding me. I was still in my jammies (which were a little bloody by now), but that didn't seem to matter. My diaper was quite wet too since I had just gotten out of bed and mom hadn't changed me yet, I think she forgot. We ran downstairs and called daddy. Mom started crying as soon as he answered his phone...
"I think Weston needs stitches!"
They decided to call my pediatrician, Dr. Suzuki, and she said to come right in. By now I had stopped crying. In fact, I was trying not to laugh at my mom's messy hair and make-up free face! She never goes out looking like that...it was so funny!
As soon as Dr. Suzuki saw my cut she said that we needed to go to a special room so she could glue it up. Glue? That sounded kind of weird, but my mom sure seemed happy that I wasn't going to need stitches after all. I got to lay on a fancy table while Dr. Suzuki put the special glue on my chin and that was that. I didn't cry at all. Mom kept rubbing my head and telling me that I'm so brave.
I love my mommy.
When we got home, she got me all cleaned up and then we snuggled on the couch to watch Sesame Street together.
Here it is...it looked a lot worse a few days ago. It's healing up quite nicely. Please excuse the boogers in my nose...I hate getting my nose wiped.
And just to reassure you that I am still the same old goofball, here is a video clip.

Kangaroo Farm and More Mexican Food!

Last week Tuesday we went to a Kangaroo farm with Caleb's preschool.
Was it fun?
Let's just say it was cold, raining, muddy, smelly, and filled with various animals...a.k.a. my worst nightmare. However, I put on a happy face for the boys (not really) and they seemed to thoroughly enjoy themselves. Here are some pictures of the smelly, dirty animals!

Here's Caleb, feeding a Llama! And here is a picture of my boys enjoying the mud!

I think we were the first ones to leave, no socializing with the other moms today! As soon as we got in the car I practically bathed the boys in wet wipes (antibacterial of course!), turned the heat on full-blast, took Caleb's jeans off (they were soaked) and enjoyed the drive home in our warm, cozy, clean car. I know...I have issues! You would think that after having two boys I would be a little more easy-going about stuff like that. Oh well!

On our long drive home, I had lots of time to think about what to make for dinner that night. We still had some good leftover herbs and peppers from hosting our dinner club, so I decided to go to more effort than I normally would on a week night, and make these shrimp enchiladas!
I've been reading some different cooking blogs lately, so I was inspired to take some photos while I cooked!

Here's the peppers, garlic, and tomatillos ready to be roasted in the oven.

And here's what they look like when they're done!
I blended all of these ingredients, plus some others, to make this yummy salsa verde.

Here's the assembled enchiladas ready to bake. And now they are ready to eat! Paul and the boys agreed that they were a success!

Dinner Club and Happy Mother's Day!

Last night we hosted our dinner club! We have been meeting about once a month with a group of friends who love to cook. We take turns hosting and the hostess chooses a culinary theme for the evening. We all coordinate recipes and everyone brings different dishes to share. I decided to go with a southwest/fresh-mex theme. All of my recipes came from the Food Network's Bobby Flay. For an appetizer I did a queso fundido (mexican cheese fondu). We used blue corn chips and jicama sticks for dipping. I made a chile relleno with a roasted red pepper sauce for the main course and a Mexican slaw to go on the side. Julie made a saffron rice and yummy shrimp quesadillas with a cilantro pesto, and Ginger made a tres leches cake (garnished with chocolate ganache and strawberries) for dessert. YUM!!! The chile rellenos were a ton of work, but everything was worth it! It was a fabulous dinner and I think we are all still full from it today!

On To Mother's Day...

This morning when I woke up I was led downstairs and into the kitchen (with my eyes closed) to find this beautiful plant for my yard. After church we went out to brunch at one of my favorite restaurants and then to the kitchen store so I could choose a new baking dish, which I had been wanting for a long time!
What a day!
Also, a few days ago at Caleb's preschool we had a Mother's Day Tea! Here he is with the pretty flower that he made for me.
I am on the board at preschool this year and was in charge of the tea. It was a success, but I'm glad it's over! It was a great time of visiting with the other moms, enjoying a yummy breakfast, and of course getting a special craft from our kids!
...And I have to throw in a few pictures of Mr. Weston so he doesn't feel left out!
We definitely had a wonderful Mother's Day weekend here. I hope all of you moms did too!
